Vegan/Gluten Free Pumpkin Chocolate Chunk Cookies!

Ok so i made the cookies tonight... They did not turn out how I expected, but it was the very

first time baking with these Ingredients, but I must say for my first time they are pretty good and I

would recommend because they are pretty guilt free. What is life if not an experiment.  So try them.. I dare you!!!

PUMPKIN CHOCOLATE CHUNK COOKIES
Adapted from Summer of Pie: Pumpkin Chocolate Chip Cookies

Yield: Makes about 2 dozen cookies.
1 can Pure pumpkin puree (15 oz)
1 cup Coconut Sugar (Amber)
1/4 cup EVOO
1 tbsp rum

2 1/2 cups Gluten Free all-purpose flour (Any kind will do.. All purpose already has Xantham gum)

2 tsp baking powder

1 tsp baking soda

2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp Pumpkin spice, optional

1/4 tsp salt
1 cup semisweet chocolate chunk (make sure they don’t contain milkfat or other animal products if you are preparing these purely vegan)

Directions:
Preheat Oven to 350.

1. Stir together pumpkin, sugars, vegetable oil, and rum in a large bowl.

2. In a separate bowl*, whisk together flour, baking powder, baking soda, spices, and salt. Add the flour mixture to pumpkin mixture and stir until combined.

 Stir in the chocolate chips.
Take large tablespoons full of dough and drop onto cookie sheet, about 2 inches apart. Be aware that the cookies don’t spread much during baking, so make sure your balls of dough are flattened slightly and “cookie” shaped.

Bake for approximately 15-17 minutes or until lightly brown and firm.

Get a nice Glass of Coconut or Almond Milk and Enjoy!!!! They are so Guilt free is ludicrous. 

Make sure you drink the milk Not umm... well... you know!!!!
