Pesto Salmon and Basmati Brown Rice with Fall Vegetable Medley

For Today we will be making...

Pesto Salmon and Basmati Brown Rice with Fall Vegetable Medley

 

Basmati!!! Yes Squire friend we taking it to India on your asses!!!! 

Yield: 3 Servings

  Ingredients:

3 Free Range Frozen Salmon Pieces ( I get mine from Trader Joe)

3 pieces of Aluminum Foil

1 1/2 Cup of water (lightly salted)

1 Cup of Basmati Brown Rice

1/2 Red Onion

1 Roma Tomato

1/2 Red Pepper (any color would be fine)

Juice of One Organic Lemon

1/4 cup of eggplant

Fresh Cinlatro

Fresh Parsley

1/4 squash (Any would do... I used a small carnival squash)

1 Clove of Garlic

3 tsp Pesto ( this is from the super easy pesto recipe)

1 tsp EVOO

1/2 chili powder

Salt and Pepper (To taste)

Directions:

Ok so I love and adore my rice steamer... Get yourself one from the chefs Catolog!!! here is mine!


Is amazing cause I can make regular Grains and also Brown Grain which take longer to cook and I can also steam Vegetables!!! Amazing!!! I recommended!!!

If you dont have one you can always make your rice on the stove top... same basic principle more room for error. But if you have a rice steamer like mine!!! read on!

1. Place your water and rice in the steamer add a little Pepper and Cilantro. Cover press brown rice button and forget it! PreHeat oven to 375.

2. Cut your veggies and mix them  in a Sautee pan. Add your other ingridients and cook like so.

Cover for about 8 minutes while making sure not to over cook the veggies!!!


Place the Veggies aside. And start on the Salmon.


Salmon goes from Frozen to Oven to tummy!!! So all you need is 3 pieces of Aluminum Foil. Lighly oil with organic EVOO spray.


Place salmon on foil and sprinkle with Salt and pepper, then add tbs of pesto right on top.  Fold Foil into pockets!


Place in Over for 35 Minutes Covered Then for another 10 uncovered.  They will come out perfect every time!!!


Wait for the beep from the rice cooker or if you used the stove top wait till rice is nice and fluffy. 



Now is time to Put it all together and Destroy it!!!! LOL


You want to Put the veggies on the bottom of the plate... then place rice on top of Veggies and Finally the Awesome Salmon on top... Like a perfect Delicious Pyramid!!!
