Is that even Edible!? Yuca and Eggplant Saute.

How Many times have you been to the market and said to yourself... WHAT THE HECK IS THAT!? Is that even edible.

Well this Recipe is for you my friend. We will be making Yuca And Eggplant Saute. I made this for

my breakfast/Lunch today and it was Amazing and I though I would share it.

Yuca also know as Cassava is A root Vegetable from Brazil and Paraguay.

Yuca is cooked like a potato and have the same carbohydrate Property, mixed with a good source of 

Magnesium, Vitamin C, and Calcium makes for a good meal.  Like any other Root vegetable we have 

to make sure that we cook it properly in order to avoid any toxic food conditions. With that being said lets begging our recipe. 

I will walk you step by step on the peealing and cutting of the Yuca for your dish!!! 

Yuca and Eggplant Saute

Yield: Makes about 2 servings.

1 large Yuca (Cassava Root)
1/2 of a Red Pepper ( you can save other half for next recipe :)...)
1/4 of an red Onion
3 Basil Leaves
couple stems of Parsley

1 tsp Crushed garlic
Juice from one Organic Lemon

1 Roma Tomato (does are the smaller ones not Cherry)

1 tsp Sea Salt (to taste really)
1 tsp Paprika (to taste)
1 tsp Black Pepper

2 Tbs Sea Salt (for boiling water)
A little EVOO to drizzle on cooked Yuca and a little for your Saute


 

Directions:
First lets start with the Yuca. I will walk you step by step on this so no worries it will turn out great!!!

Ok First you want to cut the yuca into smaller Pieces for easy pealing.

Second... You want to peal the yuca. Leaving them clean and white.

Next... You will want to cut them down the Middle... 



Leaving two half's

Finally you can place them in your Pot Full of water and salt to taste. You want to cook them in medium high heat till you can place a fork thru and they are nice and flaky.  

 

 

 

As soon as they are cooked you want to drain the water to avoid over cooking.

 Hey look at your plate you just cooked YUCA!!!! GO you Go YOU!!!

Now for the Eggplant Saute. This is super easy!!! While your Yuca is boiling place a little EVOO in a saute pan and add Eggplant, Peppers, Onion, tomato and garlic. Saute for a minute or two.


Finally Add Basil, Parsley and Lemon juice and a little bit of water from the yuca boil to your mix stir and...

Put a cover on the mix and let cook for about 5 minutes or until Eggplant is nice and cooked.



Now you are ready to Serve and Enjoy!!!!
