Orange Ginger Vegan Cupcakes with Coconut Icing

Who is ready for another Cupcake recipe!!!!?? Me Me ME!!! Wait am I the only one raising my hand!? Edward!?


Oh Come on Edward!! Cupcakes are awesome!!! And They are vegan!!!


 

Whatever!!! Making them anyways!!! FYI Jacob is cuter! :P

 

Orange Ginger Vegan Cupcakes With Coconut Icing

 


Yields 12 cupcakes

 Cake Ingredients:



    1 1/2 cups gluten free AP flour (Bob's red mill makes amazing gluten free AP flour with xantham gum already in it)
    1/3 cup dutch processed cocoa powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 cup coconut sugar
    3/4 cup coffee (I drink coffee in the am so i had some sitting in the pot)
    1/2 Applesauce unsweetened
    1 teaspoon vanilla extract
    2 tablespoons crystallize ginger, ground up (I used organic ginger butter worked great)
    2 tablespoons orange zest
    1 tablespoon orange juice
    2 tablespoons apple cider vinegar

Icing: 

hand mixer (or lots of arm muscle... I suggest hand mixer)

Can of full fat Organic Coconut milk ( Make sure the milk is refrigerated overnight and not shaken)

Coconut sugar to taste

1 teaspoon of vanilla extract

Coconut flakes


Directions:

Preheat oven to 375 degrees and line muffin tins with cupcake liners.

Mix together all dry ingredients.

Mix coffee and orange juice and thoroughly mix. Add rest of wet ingridients



Add the dry ingredients to wet and continue to mix... A wooden spoon works great!!


 

Slowly, while mixing, add in vinegar. it might foam a little that is ok. (is just a chemical reaction)

Separate mixture between liners and bake for about 20 minutes. 25 if your oven is ancient. 



Remove from oven, cool in pan for 5 minute, and then move to cooling rack.

 

Icing is super Simple!!

Open the bottom of the refrigerate milk ( why the bottom because the milk will separate into the oil and the milky substance... we don't want the oil we want the white milky part (Hayo!!!) So the oil we be sitting at the top and the part we want is on bottom... 

So open milk from the bottom without shaking and spoon out the part you need into a bowl... Medium pirax glass bowl will do. 

Add the sugar and vanilla

Mix on low untill it starts to get nice and fluffy then continue to mix for another 2 minutes on medium. Icing should look like this!!!




Then use a bag and pipe away!!! They make a amazing Breakfast Cupcake with a cup of Coffee!!! Amazing!!! Hope you enjoy them as much as I did
